Baking Tips?

I need some baking tips.  I've made like 10 batches of cupcakes since I started Kaia's cupcakes and I haven't been 100% happy with anything yet.  Well, chocolate pumpkin came close.  But the problem seems to not be with the recipes as much as with my failure.  Most of them have been coming out either heavy or a bit dry, or both.  What am I doing wrong?!  What are some tips for a moist bakery fresh cake?  I mean, all those box mixes I used to make always came out perfect!  I want my from scratch ones to turn out at least that well - preferably better.  Please help!  I need someone to offer me free baking lessons much as my lucky bloggy friend Elizabeth (Flourish in Progress) got lucky with for cooking lessons.  Anyone?  Anything?  I'd really appreciate your help or advice as I really do want to make Kaia fancy birthday cupcakes myself and not buy them or make them from a box.

1. Don't substitute anything for real butter. It is totally necessary.

2. Follow the recipe to a T, this includes mixing wet and dry ingredients separately first and then together. I didn't think this mattered, but apparently it really does.

3. Don't overmix.

4. When in doubt, seek help. I would go to allrecipes.com, look up a recipe for what you want to do and then read ALL of the modifications that other bakers made for it, they've already test-driven it and you can take the most consistent of their advice.

Khara, I sent you some tips via email about the red velvet. Try gauging our next batch very closely so you don't overbake. Maybe try just baking one cupcake and get the time right and then bake the rest. Also, be careful not to beat the batter too long- this can make for a tougher cake. If I lived close to you I'd offer to come over and bake with you (: Oh, and I went back to school when caroline was 3 months old. I had some reservations about it but it ended up being a great experience. Taking care of yourself and your needs and desires will make you a better Mom to Kaia! (:

Hey girl! Easist tip I know is to make sour cream cupcakes because the sour cream allows the cake to be extra moist. Second, use real butter at room temp, do not overmix, do not fill them to high in the muffin tins and keep in tuperware with a small piece of bread until time to eat if you make them ahead of time. Brown Eyed baker has the best ones i have made so far!

Kat, I appreciate the tips. The butter one I think I learned the hard way. I think I might be overmixing? But I'm not sure so I'm going to have to keep working on that one.

Mrs. Bellicious, thank you for your advice! I'll have to check that recipe out. My Mom was always big into baking cookies when I was growing up and ones that used sour cream were her favorite!

Everything you've posted so far looks scrumptious, so I avoid looking in between meals. It makes me hungry for a sweet snack!=)
